Spaghetti squash

Spaghetti squash

Spaghetti squash is a delicious winter squash that is loaded with vitamin A, fiber, and antioxidants. It's also low in calories and fat. But did you know that spaghetti squash contains high levels of phytates? These compounds bind to minerals in our bodies, including iron, zinc, calcium, and magnesium, and prevent them from being absorbed properly.

If you're looking for a healthier alternative to pasta, try making spaghetti squash instead!

 Step 1

Cut off both ends of the squash. Then cut it in half lengthwise. Scoop out the seeds.

 Step 2

Place the halves face down on a baking sheet. Bake at 350 degrees F for about 45 minutes, until tender.

 Step 3

Remove from the oven and let cool slightly before scooping out the flesh. You'll want to leave some of the skin on since it adds flavor and helps keep the squash together.

You can serve it plain, topped with cheese, or even use it as a pizza crust.
